Summer is upon us, and nothing is more refreshing than a chilled beverage. Solkadhi is a popular Konkan drink that not only boosts your immunity, but is delicious too. Akshada of SaffronStays 7 Seas, Alibaug shares her secret recipe to a kokum drink that every household can whip up!
Ingredients:
- 1 grated coconut
- 20 gms kokum
- 2 green chillies
- 1-2 garlic cloves
- 5 gms cumin powder
- 3 cups water
- 1 tbsp salt
- 2 tbsp sugar
- Coriander for garnish
Method
- Soak the kokum in a bowl of warm water for 10 minutes.
- Blend the coconut, green chillies, garlic and kokum and water into a fine paste. Add a cup of warm water to the mix and blend again.
- Strain the mixture over a muslin cloth or mesh strainer and collect the juice.
- Add 1 cup warm water to the moist mixture and blend into a fine paste again.
- Strain the mixture over a muslin cloth or mesh strainer and collect the juice.
- Add salt, sugar and cumin powder and refrigerate.
- Serve chilled with coriander leaves garnish.
